Add the gelatin to the warm water and mix it until dissolved. c( set aside)
Place the fresh strawberries in a food processor ( if you do not have one use a blender) until you have a liquid consistency, add the gelatin to the strawberries and mix on the food processor until they are combine, after the gelatin is mix add the sugar and mix it well until it dissolves.
With a strainer in a big bowl and a spatula add the strawberry mixture to the strainer and slowly move it around to remove all the seeds and gelatin that did not dissolve. Continue this process until done with all the strawberries and set aside.
In a separate bowl add the cream and vanilla, then using an electric mixer whipped until soft peaks form ( Do not over whipped it as it will turn into a butter consistency)
Slowly add the whipped cream in small portions to the strawberries and gently fold, do not fold fast as it will get rid of the bubbles in the whipped cream, keep incorporating the whipped cream until everything is mix and you have fluffy consistency.
Place the mixture in individual containers and let rest in the refrigerator for 2 hours cover with a plastic wrap, decorate with fresh strawberries before serving.
