Equipment

  • High Speed blender
  • Measuring jug
  • Measuring cup
  • Medium sauce pan
  • Loaf pan
  • Plastic wrap

Ingredients

Sorbet

  • 1 Cup Coconut milk Use coconut cream if prefer but half cream, half coconut milk.
  • 4 Cups Pineapple (frozen) Organic
  • 1 Tbsp Vanilla extract
  • 1/2 Cup Coconut flakes

Simple Syrup

  • 1 Cup Cane sugar Organic
  • 1 Cup Water

Instructions

SImple syrup

  • 1. Place the sauce pan in the stove on medium heat and add the water and sugar. MIx it and lower the heat, let it simmer for 10-15 minutes. Let it cool off.

Making the Sorbet

  • 1. In a high speed blender, add the coconut milk, the cold simple syrup, vanilla, coconut flakes and pineapple.
    2. Blend on high until combine. Cover the loaf pan with plastic wrap and add the sorbet. Place in the Freezer to let it set and store.
    3. Serve with an ice-cream scoop and sprinkle with more coconut and pineapple chunks.

Notes

Simple syrup: This can be made in advance the day before.
Store: In the freezer, cover with plastic wrap. This will prevent frostbite.
