Maduros al Horno ( Platano macho al horno)

If you have visit latin america or the caribbean, you probably eat this tasty sweet plantain.

Equipment

  • Glass baking dish
  • Aluminum foil for easy cleaning (optional)

Ingredients

  • 6 Plantains This are the very ripe plantains not the green ones. Platanos macho
  • 2 Tbsp Vegan butter I prefer Miyokos
  • 1/2 Tsp Kosher or pink salt Optional to sprinkle over the cooked maduros

Instructions

  • Preheat oven to 400°F (204°C)
  • Peel the plantains, now you can cut them in half as in the image or wihtout cutting it wont affect cooking baking process.
  • Rub the butter on the plantains on both sides and place in the oven.
  • Bake the maduros for 30 minutes, turning them 15 minutes. Making sure the the sides are golden brown. As in the image.
    Depending on you region you might need to bake them for 10-15 minutes longer.

Notes

Stored them in the freezer in an ziplock bag after they cool and reheat in the microwave for 1-2 minutes.
Enjoy them by it self, with a side of beans and rice for a tasty meal you won't forget
