Preheat the oven to 350°F ( 175° C )
Add flour, baking powder, salt, and cocoa powder to the sifter and sift together in a bowl.
In a mixing bowl add the water, oil, sugar, vanilla, expresso and apple cider vinegar, mix everything until well combine.
Add the 1/4 cup of chocolate and the 1 tsp coconut oil in microwave safe dish and melt.
Combine the wet ingredients with the dry ingredients with melted chocolate until everything is mix together.
Next add the 1 cup of chocolte chips to the mixture and mix it well.
Prepared the baking dish by adding parchment paper to the bottom for easy cleaning, next add the batter to the baking dish and make sure is spread evenly, sprinkle the remaining 1/4 cup of chocolate chips on the top of the batter
Place in the oven and bake for 25 minutes. If you are making them gluten-free add 15-20 minutes more to cook the center.
