Chickenless sandwich
This healthy sandwich is also tasty and is an excellent option for starting a plant-based meal.

- 1 Can Jackfruit I buy mine at trader joe's
- 1 Can Chickpeas If you have hummus use it instead. 1/2 cup
- 3 Garlic cloves
- 2 Tbsp White onion
- 1 Tsp Cayenne pepper
- 1 Tsp Black pepper
- 1/4 Tsp Kosher salt
- 1 Tsp Creole seasoning Slap Ya Mamma or use the Tony chacheres creole seasoning
- 1/2 Tsp Garlic powder
- 1/2 Tsp Dijon mustard
- 1 Tbsp Vegan chickenless seasoning Trader Joe's brand or use the same amount of turmeric if you can't find the seasoning.
- 1/2 Cup All purpose flour Use glutten free same amount or cocnut flour
- 1/2 Cup Cornmeal Panko breadcrumbs
Chop the jackfruit, minced garlic, and onion finely on a cutting board. Add the mixture into the mixing bowl.
Next, preheat the oven to 350°F ( 180° C )Prepared the baking sheet with aluminum foil and set it aside. In the mixing bowl, add the flour, cornmeal (or panko ), the chickenless seasoning, slap ya mama, dijon mustard, kosher salt, garlic powder, black pepper, and finally cayenne. Mix with the jackfruit, garlic, and onion until combined. Set aside.
Add the can of chickpeas with the aquafaba ( the juice of the chickpeas) into the food processor and blend into a hummus-like texture. Add it to the mixing bowl with the jackfruit and combine well.
After the mixture is combined, make it into four equal-size patties and place it on the baking sheet. Put in the oven in the middle rack and bake for 20-25 minutes or until golden brown turning halfway through.
Note:
- You can freeze the patties in a ziplock bag, double bag it, and keep frozen for up to two months without losing flavor.
- Let them thaw before cooking them.
- You can also dip them in hot sauce and make it a hot & spicy sandwich.

- Romaine lettuce, with tomato slice, jalapeño , red onion, and mustard.
