I am from Mexico and in Mexico we call this platano macho al horno, they sell it in the streets and they sprinkle sugar or even condense milk on it if you prefer is a tasty treat. They seem them in fairs or they just go street by street with a very loud whistle, to let us the platano macho are here. Yum!!
My husband is from Ecuador, they call them maduros al horno ( or if you fry them is called maduro fritos) They eat them with their meals juts like in the Caribbean. If you have being to the Caribbean or Latin America you probably had them with your meals.
This tasty treat is a staple on our home. Whether we eat them by itself or with meals, we all enjoy them. It also bring memories from childhood.

Maduros al Horno ( Platano macho al horno)
Equipment
- Glass baking dish
- Aluminum foil for easy cleaning (optional)
Ingredients
- 6 Plantains This are the very ripe plantains not the green ones. Platanos macho
- 2 Tbsp Vegan butter I prefer Miyokos
- 1/2 Tsp Kosher or pink salt Optional to sprinkle over the cooked maduros
Instructions
- Preheat oven to 400°F (204°C)
- Peel the plantains, now you can cut them in half as in the image or wihtout cutting it wont affect cooking baking process.
- Rub the butter on the plantains on both sides and place in the oven.
- Bake the maduros for 30 minutes, turning them 15 minutes. Making sure the the sides are golden brown. As in the image. Depending on you region you might need to bake them for 10-15 minutes longer.
