Mexican Pickle Red Onions

Ingredients
- 1 Whole red onion
- 1/4 cup Hot water
- 2 Limes just the juice
- 1 Tbsp Kosher salt
1 mason jar or any other jar with a lid
Instructions
- 1. To make the Mexican red pickle onions, place the lime juice and salt in the jar, let it dissolve.2. Add the thinly sliced onion ( Julienne style) and place in the jar that has the lemon juice and salt. 3. Next combine all the ingredients and add the hot water. 4. Lastly cover the jar with the lid and let it rest for 15-30 minutes. (You can eat them right away, but it is best when it's left to cure overnight)
Notes
- These pickle onions will last you for 1-2 weeks if stored properly in the refrigerator.
