Authentic Mexican Flour Tortillas
This is my moms recipe, hope it brings you as much joy as it alwasy bring me when I make them.

- Rolling pin, Flat Griddle, Bowls, Plastic wrap or cloth
Ingredients
- 3 cups All-purpose flour I use Non-GMO or organic ( you can use glutten free same amount )
- 2 Tsp Baking powder Do not use baking soda
- 1 Tbsp Kosher salt
- 1/4 cup vegetable shortening
- 1 ½ cup Boiling water
- 1 Tbsp Vegetable shortening This will be use to add to the flour balls
Instructions
- 1.In a mixing bowl add the flour, shortening and baking powder. Mixed the ingredients by hand until the shortening is combined completely with the flour. The mixture will be a little lumpy ( the texture is similar to sand).2. After the mixture is done set a side and let it rest for 2-5 minutes.To the boiling water add the salt and dissolve completely. 3.Next add the water mixture to the flour mixture slowly while mixing it until is all combine, making small additions of the water until all the water and flour are combine.Knead the mixture for at least 5 minutes or until is no longer sticking to your hands.4. To make the flour balls, use the tablespoon of extra vegetable shortening to grease your hands, small amounts no need to make extra grease. ( this process helps the flour balls to not dry out) Make the flour balls the same size, kneading the flour after making each ball. Next place the flour balls on a container and cover it with a table cloth or plastic wrap. Let it rest for at least 10 minutes before using.Now heat up the griddle on medium.5. The next step is to stretch the flour balls ( dough) into a circular shape with the rolling pin, until they are thin. ( Do this step with all the dough unless you are not using all of them, look below on how to stored them in refrigerator) Once the flour tortillas had been stretch, place in the griddle and flip right away, than flip one more time after a few seconds and some bubbles have form, and one last time after a few seconds past, on this last step use as cloth to gently press on the tortilla to make it blow like ballon. 6. Lastly remove from the heat and enjoy. Important to remember that to flip the tortillas there is a three step process as explain above, ( Do Not skip or the tortillas will be hard) it takes less 90 second to cook if the griddle has been properly heat it. Notes
- The tortillas are very easy to make, just make sure you are following the instructions for flipping them correctly. It's only three flips and you are good to go.
