My Tofu Curry

- Medium pot with a lid
Ingredients
- 1/4 cup Organic tomato paste
- 1 Tbsp Curry powder
- 2 Tsp Kosher salt
- 1/2 cup Organic vegan vegetable broth
- 1/2 cup Bella mushrooms Slice-Any other mushroom works well too.
- 2 Carrots wash and peel Cut in cubes
- 1 Tbsp Organic cane sugar Substitute for Maple or agave if you prefer
- 1 can Unsweetened coconut milk
- 1 Red bellpepper Cut in cubes
- 1 Orange bellpepper Cut in cubes
- 1/3 cup Peanut butter Use almond butter if allergic to peanuts
- 1 block Firm tofu Dry and cube
- 2 Tbsp Fresh cilantro chopped
- 1 cup Broccoli Wash and ready
- 2 Garlic cloves Finely chopped
- 2 Tbsp White onion Finely chopped
- 1 Jalapeño Optional; finely chopped
- 1 Tbsp Turmeric powder
- 1 Tbsp Vegetable oil I also use the vegetable broth instead of oil for frying
- 1/4 Tsp Cayenne pepper
Instructions
- 1. Place the pot in the stove on medium heat, add the oil ( or vegetable broth )2. Add the onions, galic and jalapeño ( if andding any ) and let them sweat while constanlty stirring next add the spices wile continue to stir.3. Next add the peppers and tomato paste, add the sugar ( or agave syrup if susbtituding ), peanut butter, and vegetable broth let it simmer for 5 minutes.4. Add the carrots and mushrooms to the pot and mix let them cook for about 5 minute.5. Next add the coconut milk and stir, add the tofu and cover for another 5 minutes.6. Finally add the broccoli and cilantro, lower the stove temperature a low setting cover the pot and let it cook for 10 minutes.7. It's ready to serve,over rice or quinoa. Add extra cilantro for garnihs if you prefer to make it look prettier when serving.
Notes
- If you do not want to over cook the broccoli add them to the pot in the last two minutes for them to cook, but remain firm.
