Equipment

  • Food processor or blender, mixing bowl, wisk or stand mixer and muffin tin baking dish.

Ingredients
  

  • 1 ¼ cup Organic all purpose flour For gluten-free use almond flour saem amount
  • 2 Tbsp Vegan butter or coconut oil I use the Miyokos brand for buttter
  • 3/4 cup Gluten-free rolled oats
  • 1/2 cup Unsweetened coconut shreds or flakes
  • 1/4 cup Semisweet vegan chocolate chips I use the brand call "Enjoy Life"
  • 1/2 Tsp Vanilla extract
  • 1/4 Tsp Kosher salt
  • 1/4 cup almond butter, peanut butter or tahini Use any butter you prefer the taste wont be affected
  • 3 Tbsp Maple or agave syrup
  • 1 Tsp Baking powder
  • 1/2 Tsp Baking soda
  • 1 Tbsp Flaxseeds
  • 4-5 Ripe bananas
  • 1/2 cup Water
  • 1 Tbsp Apple cider vinegar
  • 1-2 scoops Orgain chocolate fudge protein powder Use any other powder of choice

Instructions
 

  • 1. Preheat oven to 350° F ( 175° C ), and prepared the muffin baking dish by adding cupcake liners or greasing the baking dish.
    2. In the food processor add the oats and flakes and grind until you have a flour consistency.
    3. Mix water ,oil, vanilla ,maple syrup and apple cider vinegar and mix it well.
    4. Add the oats mixture to the flour, baking soda, baking powder, salt, flaxseed, protein powder. Mix and set aside
    5. Mash the bananas and add almond butter, combine it and make sure is all creamy.
    6. Add the oil mixture to the banana mixture and mix it well.
    7. Next add the banana mixture to the dry flour mixture and mix it well, once it's well mix add the chocolate chips, mix it until it's combine.
    8. Add the bater to the muffin baking dish and place it in the oven. baked for 25-39 min.

Notes

  • Here in the recipe they look like chocolate muffins, due to me using the chocolate protein powder. 
  • Remember that the protein flavor won't affect the taste.
  • The protein only helps you get the extra protein you need, while still enjoying a treat. Made this recipe!
