Mexican Cheese Entomatadas

A delicious Mexican dish, my kids favorite.

Equipment

  • 1 Medium pot
  • 1 Frying pan
  • 1 High Speed blender

Ingredients
  

  • 12 Roma tomatoes
  • 4 cups Water To boil tomatoes
  • 2 Celery sticks Chopped
  • 2 Tbsp Avocado oil or vegetable oil
  • 1 Tbsp Kosher salt
  • 1 Pinch Oregano
  • 1/2 cup Water

Ingredients for Sauce Above

  • 20 Corn tortillas
  • 16 oz Vegan cheese I use mozzarella, it melts better. Miyokos brand or Violife
  • 1/4 cup oil For frying tortillas

Instructions
 

  • Preparation of Sauce:
    1. Place the pot over medium heat, add the tomatoes with the 4 cups of water and cover until the skin start to peel off, about 10 minutes.
    2. Remove tomatoes from heat, take all the skin off the tomatoes and place in blender with the oregano, until you have a smooth sauce.
    3. Next in a medium saucepan heat it up add the 2 tablespoons of oil, after the oil is hot add the celery, let it cook for about 2 minutes. Add the tomato sauce to the pan, cook it for 3 minutes. Add the water and salt, let it cook for 10-15 minutes cover on low heat. 
    4. Leave it on warm heat if you area using it right away if not take it off the heat and set aside. 
    Preparation of the Entomatadas: 
    1. Place a small frying pan on the stove and add a little oil.
    2. Add each tortilla on the oil just for a few seconds on each side, remove from heat set aside on top of a paper towel to get rid of excess grease, do the same for all the tortillas. 
    3. After all the tortillas are done frying, grab one at a time and dip in the tomato sauce put on a plate and add cheese to the inside and roll( like a burrito), do the same to all the tortillas serve around 3-4 per plate.
    4. After all the tortillas are rolled add more cheese to the top of the tortillas and then add the tomato sauce over the top.
