Mexican Vegan Ceviche

- Small to medium pot
- Knife
- Cutting board
- Large mixing bowl
- Lemon/lime squeezer
- Measuring spoons and cups
Ingredients
- 1 Whole Cauliflower Wash and ready to use
- 10 Limes Just the juice
- 1 Tsp Black pepper I prefer to grind it when as a need it. but alredy grind pepper will do.
- 1 Tbsp Kosher salt Use more salt if you prefer
- 4-5 Roma tomatoes Cut into small cubes
- 1/2 Red or white Onion Cut into small cubes
- 1/2 Cup Fresh Cilantro Finely Chop
- 1-2 Cucumbers Take seeds out and cut into small pieces
- 1-2 Fresh Jalapeños Wash, take seeds out and cut into small pieces
Instructions
How to prepared Cauliflower
- 1. Cut the cauliflower and wash.2. In a small pot, place it on the stove, next add water about 4quarts bring to boil and add salt .3. Add the cauliflower to boiling water and wait for itto cook for about 5 minutes.4. After it cooks remove from heat and draining the water, next chop the cauliflower into small pieces (similar to small cubes sizes) place in a separate container add one of the lime juice and half the salt to the mixure. 5. Place the mixture on the side and let it cool while preparing the rest of the veggies.
For the veggies
- 1. Make sure to wash all the vegetables and cut in cubes 2. In a large bowl ( big enough to place everything even the cauliflower) 3. Next the cucumber clean and take seeds out and cut into small cubes.4. First add the chopped onions to the bowl, next add all the lime juice without any seed, the black pepper and salt mix it up. Leave for about five minutes to rest 5. After the five minutes passed add the rest of the vegeatbles, tomatoes, jalapeños, cucumber and cilantro to the bowl and mix it together.6. Finally add the cauliflower to the vegetables mixture mix it well and its ready to enjoy.
Notes
- You can enjoy it with a tostada, a side of tortilla chips or saltine crackers.
- You can also add more jalapeños if you prefer it spicier or leave it out if you don't want any.
